Mojama Extra de Isla Cristina IGP
Our Extra category Mojama belongs to the PGI "Mojama de Isla Cristina" in vacuum-packed taco format of approximately 250 or 500 grams.
Being an Extra category, we obtain it from the noblest part of the tuna, the loin, which after undergoing a salting and drying process and a careful selection, gives rise to this product.
Its dark brown external appearance shows us, when cut, the veins typical of the tuna loin from this area.
To prepare it, you just have to cut it into thin slices, or as you prefer, a splash of Extra Virgin Olive Oil and some fried almonds.
Of the 3 recognized qualities of the Mojama, in Bocados de Huelva we offer you the best considered, the "Extra".
Its good reputation is due to the fact that it comes from a more compact muscular zone, which translates into a greater softness in its texture, as it has less marked grain than in first quality or sirloin mojama.
